Veggie Fish Sticks
Vegetarian Fish Sticks make a tasty dinner or snack. We like to dip them in tartar sauce.
This is a very tasty recipe for Veggie Fish Sticks. Of course, they really don't taste like fish but the kelp flakes give them the taste of the sea and the shape makes one think of a fish stick. These are actually a recipe for veggie meat balls but every time I made them I'd tell Don they reminded me of fish so that's how they eventually came to be "fish" sticks. The original recipe didn't have the kelp flakes but as I had some in the cupboard I added some to make them a little more fishy.
My friend, Janet, had the recipe published in our school fundraiser cookbook when we both taught together. I've known Janet most of my life, since we were both teenagers. She is a little younger than I am and I became her Junior Camp counsellor way back in the middle of the last century. She seemed much younger then and I guess I seemed much older to her and her cabin-mates. I do remember tucking them all in their bunks and leaving the cabin to guard the door so none of them would escape to the boys' side of the camp. I would sit on the steps with my back to the door. If any of them were going to escape they would have had to knock me off my perch first. It's hard to believe so many years have gone by since those long summer days at Camp Woody Acres. We eventually both grew up and became teachers and ended up in the same school for a few years.
The Veggie Fish Sticks are delicious served with mashed potatoes or French fries and a side of coleslaw. Of course, tartar sauce is the perfect condiment for "fish" so don't forget to serve that, as well. And if you don't like fish you'll like these because you won't find any fins or scales and the only gills on these "fish" sticks are the Gill Family teeth!
Using a mixer, cream the cream the cream cheese. Add remaining ingredients, except oil, and beat until well combined. Or alternately you can use a spoon or your hands to mix all the ingredients together. Form the mixture into sticks about 4 inches long by 1¼ -1½ inches wide. If the mixture is too soft to handle refrigerate for about half an hour. I had no trouble forming my sticks straight from the bowl.
Fry in oil over medium heat until golden brown and crisp. Serve hot with tartar sauce.
Makes about 24 "fish" sticks.
Note: If the mixture seems a bit dry add another egg or two.
Tartar sauce is really good with these Veggie Fish Sticks. Make your own homemade tartar sauce by adding chopped sweet or dill pickles to mayonnaise. Add a squeeze of lemon juice and a dab of Dijon mustard. Season with salt and pepper if desired

Veggie Fish Sticks- 2 sleeves of saltine crackers, crushed (from a 4 sleeve box)
- 1 8oz/250 gram package cream cheese, room temperature
- 2 cups dry oatmeal
- 1 cup day old bread crumbs
- 1 10 oz. can mushroom soup
- 2 eggs
- 1 teaspoon savoury
- 1 teaspoon onion powder
- 1 teaspoon kelp flakes or any fishy tasting seasoning like Old Bay
- Oil for frying

Place the ingredients in a large bowl.
Mix all together. You can use a spoon, your hands or a mixer. Everything should be nice and smooshy.
Shape the mixture into sticks and fry in oil on both sides until a lovely golden brown.
