Frozen Strawberry Pops
Frozen Strawberry Pops are a real taste of summer on a hot day. What a treat these will be at your next family gathering.
Finally, the good ol' summer time is here. And with the lovely warm weather comes the frozen summer treats. We long for summer with its warm weather and when it arrives we want to cool down. That's contrary human nature for you! Ha, ha!With summer also comes summer fruits and berries and one of the first to arrive are luscious strawberries, warm and sweet from the gardens and farms. Our strawberries are not ripe yet but just across the Gulf (of Saint Lawrence) they are sweet and ripe in Nova Scotia. I was lucky enough to purchase 3 containers of these berries last week and they were as good as any I've ever tasted. Deep red and deliciously sweet they were perfect for eating right from the basket.
We ate the berries fresh and in a Strawberry Rhubarb Shortcake and still had a container left. With that last lot of strawberries I made these frosty Frozen Strawberry Pops. YUM! If you have to cool down on a summer day, this is the way to do it. So easy to make, as well, and ready overnight in the freezer. And they're healthy...how good is that? It's a serving of fruit without even realizing your getting one.
I added a little sugar to the mix because when fruit is frozen the sugar content seems to diminish. You can leave out the sugar if you wish, though.
I made seven pops with my popsicle moulds but you may get more or less depending on the size of your containers. The mixture made 2⅓ cups but would probably have made more if Don and I hadn't been eating the berries while I was cleaning them.

Frozen Strawberry Pops
1 litre (quart) juicy, ripe strawberries
¼ cup sugar or other sweetener, optional
1 tablespoon lemon juice
Wash and hull strawberries. Place ⅔ of the berries in blender container with the sugar and lemon juice and blend until well pureed. Chop the remainder of the strawberries in small pieces. Mix the strawberry puree and the chopped strawberries together. Fill popsicle moulds and insert sticks. Freeze until frozen solid, at least 4 hours or overnight.
Makes 6-8 pops, depending on size of moulds.
Here are those lovely Nova Scotia strawbereries, washed and hulled.
Place ⅔ of the berries in the blender with sugar and lemon juice.
Blend until you have a smooth puree.
Chop remaining berries in small pieces.
Mix the pureed berries with the diced berries.
Pour the mixture into popsicle moulds.
This is harder than you think! What a mess I had.
Place in the freezer overnight or long enough to freeze completley.
I couldn't wait to get a bite of this Frozen Strawberry Pop.
