Banana Chocolate Chip Cookies
If you love Banana Bread or Muffins you'll love Banana Chocolate Chip Cookies. They have all the goodness of Banana Bread but have the convenience of a cookie.
A few weeks ago I received this recipe for Banana Chocolate Chip Cookies in my inbox from Chiquita Bananas. I have another recipe as well but this one looked much nicer so I decided to try it out and I wasn't wrong. Don and I both liked them so that makes this recipe a winner and will fit in the old recipe box quite well.Grab one or two to go with no slicing of bread or peeling of muffin papers. Tuck these little gems away in picnic baskets, lunch bags or just gobble them up with a cup of tea or a glass of milk. And you can say they are healthy because of the bananas, hahahaha!
I have made one or two changes to the original recipe but nothing to change the integrity of the finished product. Obviously, with mashed bananas as an ingredient, the cookies are of the cakey variety but as the old saying goes, "Variety is the spice of life". I hope you enjoy them as much as we do.

Banana Chocolate Chip Cookies- ¾ cup ripe bananas, about 1½ bananas
- 1½ cups flour
- ½ teaspoon cinnamon
- ¼ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¼ cup granulated sugar
- ¼ cup brown sugar, packed
- ⅓ cup butter, room temperature
- 1 egg
- ½ teaspoon vanilla
- 1 cup chocolate chips
- ½ cup chopped walnuts or pecans, optional
Preheat the oven to 350 degrees. Line cookie sheet(s) with parchment paper or grease.
In a small bowl combine the flour, cinnamon, baking powder, baking soda and the salt. In another small bowl, mash the bananas with a fork.
In a large bowl, beat the butter and sugars until light and fluffy. Beat in the egg, mashed bananas and vanilla. The mixture will be quite wet. Add the flour mixture and stir or beat with mixer until well combined. Stir in the chocolate chips and the nuts if using.
Drop by spoonfuls onto prepared cookie sheets and bake in preheated oven for 12-15 minutes. I used my smallest scoop and got 22 cookies.
Makes approximately 20-30 cookies, depending on the size.
Mash the bananas and measure out the dry ingredients.
Beat the butter and sugars together until light and fluffy. Beat in the egg, vanilla and mashed bananas. The mixture will be quite wet.
Stir or beat in the flour mixture until well combined.
Stir in the chocolate chip cookies and nuts if using. I didn't use nuts this time but I probably will next time I make them.
Drop the dough by spoonfuls onto prepared pan. I used my smallest scoop and got 22 cookies of a nice size.
Bake at 350 degrees for 15 minutes.
Let the cookies cool on a rack and then store in an airtight container or zip lock bag.
You can say they are healthy because of the bananas, hahahaha!
