Vegetarian Sloppy Joes
Vegetarian Sloppy Joes make a quick meal for the whole family. Use your favourite vegetarian burger crumbles or reconstituted TPV.
I had a few leftover hamburger buns and was wondering what I could do with them, other than another burger meal, when I thought of Sloppy Joes. (Which is really another burger meal, ha, ha.) We haven't had Sloppy Joes in several years even though we really like them. So today I put a remedy to that situation and we had delicious Vegetarian Sloppy Joes for our dinner. I served them with iceberg lettuce, tomato wedges, cucumber sticks and salad dressing. I also had a side of potato chips for anyone who wanted them. French fries would also be a popular side dish for Sloppy Joes.I like Sloppy Joes on the sweet side but you may like less sugar or none at all so taste the mix before you mix in the sugar.

Vegetarian Sloppy Joes
- 1 package Yves Veggie Ground Round or your favourite vegetarian burger crumbles or reconstituted TVP, about 2 cups
- 1 medium onion, diced
- 1 small green pepper, diced
- 1 tablespoon oil
- ⅛ teaspoon salt
- 1 cup tomato sauce or pasta sauce
- ½ cup ketchup
- 1 tablespoon white vinegar
- 2 tablespoons brown sugar, or to taste
- 6 burger buns, plain or toasted
How to make it:
In a large frying pan, over medium heat, sauté onion and green pepper until cooked and just starting brown. Sprinkle salt over the vegetables and add the vegetarian burger crumbles, tomato sauce, ketchup, vinegar and brown sugar. Simmer on low about 15 minutes or until the mixture has thickened a little. Serve on your favourite burger buns.
Makes about 6 servings.
The picture is blurry but you can that after the mixture simmered it has thickened up a little.
Spoon the sloppy Joe mixture into your favourite burger buns. I had my bun toasted.
Delicious Vegetarian Sloppy Joes served with a side of salad and a few potato chips.
