These Refrigerator No-Bake Graham Lemon Squares couldn't be easier with only three ingredients from start to finish! Similar to a lemon icebox cake the squares are not as rich in calories or in cost.

When David graduated high school in 1997 the Salvation Army Church in the neighbouring town of Peterview hosted a church service in honour of the graduates. This is a nice tradition that each church denomination takes turns doing each year. I don't remember the service but I do remember the luncheon that was held afterwards. Church ladies are famous for their delicious spreads and this was no different. A finger food affair, with tables laden with dozens of sandwiches, tea buns, cookies and squares and other delicacies to tempt the palate, was a sight to behold and a delight to taste. There are two particular items that stand out in my mind when I think back to this afternoon.  

One was the Beet and Mustard Potato Salad sandwiches which I had never seen or tasted before but was more than willing to give them a try. They were delicious! For those who don't know what the sandwiches are, they are build up with bread, Mustard Salad, bread, Beet Salad and bread. A very pretty sandwich indeed with the layers of white, yellow and bright pink. One day I'll do a blog on these very regional sandwiches. 

The second item of food was the Graham Lemon Squares. They looked very humble on the cookie platter but anyone who knows food can tell you brown stuff often tastes delicious. I was hooked on the first bite of the lemony sweet graham wafer goodness. Of course I had to ask around to find out how to make them and I was astounded to find out they took only three ingredients! Mrs. Isabelle Sheppard gladly gave me the recipe and I have made them several times over the years. 

Similar to a lemon icebox cake the squares are not as rich in calories or in cost. If you have a can of sweetened condensed milk, bottled lemon juice and a box of graham wafers you're good to go and will have a lemon lovers dessert ready in minutes. But you'll have to wait at least 8 hours or overnight for them to soften and become cake-like before you can eat them. And they are worth the wait!

Refrigerator No-Bake Graham Lemon Squares
How to make it:
Line the bottom of an 8-inch square pan with parchment paper for easy removal. Line the prepared pan with whole wafers trimming any that don't fit.  

Mix sweetened condensed milk and lemon juice together. Spread ⅓ of milk mixture on top of wafers.  Repeat the wafer and milk layer and end with a third layer of wafers. Mix remaining sweetened condensed milk with about ¼-⅓ cup crushed wafer crumbs and spread on top of the third layer of graham wafers. Sprinkle a few graham wafer crumbs on top.  Cover with plastic wrap and refrigerate overnight.  Cut into squares when ready to serve.

Refrigerate any uneaten squares.

Makes 16 large or 25 small square.


Line the bottom of an 8-inch square pan with parchment paper for easy removal. Line the prepared pan with whole wafers trimming any that don't fit.  

Mix the sweetened condensed milk with lemon juice. 

Stir until the juice and milk become a thick and creamy mixture.
 
Binder clips are dandy to keep parchment paper from falling into the pan. They can also be used in the oven if you are baking a pan of squares.

See how thick and luscious the sweetened condensed milk becomes with the addition of lemon juice. 

Make three layers of wafers with two layers of the sweetened condensed milk in between.

Mix a few graham wafer crumbs in the remaining milk mixture. You will spread this on the third layer of whole wafers.

Sprinkle a few graham wafer crumbs on top and then pop the pan in the refrigerator overnight. Make sure you cover the pan with plastic wrap.

Next day lift the squares from the pan using the overlapping parchment paper.

Cut into the desired amount of squares or bars. If the squares are to be on a plate with other cookies cut them small but if they are the main dessert cut larger portions. For large squares serve with a fork as they are quite soft.
