Chocolate Crinkle Cookies

I haven't made these cookies in years. Over fifteen years to be almost exact. I made them for Peter and Vicki's wedding to go along with the desserts. Every year I bring out the recipe but never get around to making them but this Christmas I carried through with my plans and now have two batches made. I froze a dozen each for the boys and families, took a few to church and have a few leftover for another day. 

An optional ingredient is Hershey's Kisses or Hugs. I searched, in vain, for the Hugs and found them days after the cookies had been made. I bought a bag anyway along with the candy cane stripe kiss. They would have been very festive looking had I found them in time.

Chocolate Crinkle Cookies 
  • 2 cups white sugar
  • ½ cup vegetable oil
  • 2 teaspoons vanilla
  • 4 ounces unsweetened baking chocolate, melted and cooled
  • 4 eggs
  • 2½ cups white flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup icing sugar
  • Chocolate kisses or hugs, unwrapped, optional
How to make it:
Beat together sugar, oil, vanilla and chocolate in large bowl. Beat in eggs, one at a time. Stir in flour, baking powder and salt. Cover and refrigerate at least 3 hours.

Preheat oven to 350 degrees. Grease cookie sheet or line with parchment paper. Shape dough into balls using about a rounded tablespoon of dough. Roll balls in icing sugar to coat. Place about 2 inches apart on cookie sheet.

Bake 10-12 minutes or until almost no indentation remains when touched. If using the chocolate kisses or hugs let cookies cool 2 minutes and then press one chocolate in center of each cookie. Remove from cookie sheet. Cool completely on cooling rack before storing.

Makes about 40-48 cookies.

This is the baking chocolate I used. It is unsweetened so you won't be tempted to lick the bowl. Chop the chocolate and melt over very low heat or microwave in 30 seconds increments until just melted.
